Today I've partnered with got milk? to bring you the funnest dinner ever. We've all had cereal for dinner, but what if it was savory and nutritious? With the help of my kiddos I've updated my great grandmother's potato casserole to be just that! When I was brainstorming savory cereal the first thing that came to mind was this corn flake-topped childhood favorite. Creamy potatoes, crunchy corn flakes, it had night cereal written all over it.
Of course upon inspecting the original recipe I realized that there was quite a lot of room for improvement. The first thing that had to go was the cream of mushroom soup, instead we would get our extra creaminess in the form of garlic and herb infused milk that could be poured over the dish at the table. (The kids got such a big kick out of that part.) And I added a healthy dose of kale because cereal for dinner doesn't have to mean skipping your vegetables.
This dish can easily be made ahead and heated right before dinner and it makes great leftovers. Plus, it's the perfect kind of recipe to get the kids helping in the kitchen. My kids smashed, scooped, sprinkled, and poured and they had so much fun doing it. If you're looking for a fun twist on cereal for dinner, you've got to try this recipe!
Night Cereal: Modern Potato Casserole
- 3 pounds small potatoes, cubed (I used red and white)
- 1 bunch of kale, chopped
- 1 stick (1/2 cup) butter, divided
- 1/2 cup sour cream
- 3 cups corn flakes
- 2 cups milk
- 3 cloves garlic
- 4 sprigs herbs (I used thyme and rosemary)
- Boil the potatoes in salted water until tender. Add the kale in the last few minutes of cooking, or sauté separately. Drain and place in a large bowl.
- Smash the potatoes and kale with 1/2 a stick of butter and sour cream. They don't need to be smooth, you're going for "smashed" as opposed to mashed, making it the perfect job for kiddos.
- Butter a large casserole dish and add the potato mixture.
- Melt remaining butter and toss with corn flakes. Sprinkle the corn flakes on top of the casserole.
- Bake at 350 degrees Fahrenheit for 30 minutes.
- While the casserole bakes, infuse your milk. Place garlic, herbs, and milk in pan and warm over low heat.
- Strain the milk into a pitcher and serve with your casserole.
