I am not a big fan of fads, especially when it comes to dieting. But I am always looking for delicious, easy ways to add more veggies to my diet. Especially at this time of year. I've found that a simple green smoothie is a great way to practice a bit of self-care. Because here's the truth, as a busy mom, I don't always put my health first. I prepare a healthy family dinner almost every night, and Jude eats like a superfood king, but I often drink coffee for breakfast and pick off his plate for lunch. This smoothie is not meant to replace a meal, but it does help me up my daily intake of fruit and veggies, and it provides a great afternoon pick-me-up. Note: This simple recipe has no added sugar, you might want a bit of honey, but I really like it as is.
Green Smoothie Recipe
Ingredients
- one small or half a large ripe pear, cored
- 1/2 cup plain yogurt
- two generous handfuls of baby spinach
- 1/4 - 1/2 cup water
- handful of ice cubes
- juice of 1/2 a lemon
Directions
- Add all ingredients to blender.
- Blend until smooth.
- Enjoy in good health!
