I thought I'd share my recipe for turkey tacos. This is in no way authentic Mexican food but it is tasty, healthy, and easy.
Turkey Tacos
1 onion, diced
1 lb ground turkey meat
1 jar roasted bell peppers, chopped (or one fresh pepper)
2 tablespoons cumin
2 teaspoons pimenton (smoked paprika or other mild smoked chili powder)
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
pinch (or more) cayenne pepper
3 tablespoons tomato paste
salt and pepper
1. In a large skillet over medium high heat cook onion (and pepper if fresh) in a few glugs of olive oil.
2. When the onions are about done, add the roasted peppers and push to the sides of the pan. In the cleared space brown the turkey.
3. Once brown, add the spices and tomato paste. Add about 1/4 cup of water, stir and turn down the heat.
4. Simmer for about ten minutes, taste and adjust seasoning.
5. Serve with all your favorite taco fixings, and dig in!
